RECIPE : Deep Dark Secret Cheesecake

Ingredients:
3 cups dark chocolate wafers, finely crumbled
¼ lb. unsalted butter, melt

Instructions:
Mix crumbs with melted butter and stir well.
Press into chilled, buttered 10-inch springform pan.
Bake in preheated 350-degree F oven for 10 minutes.
Cool, then chill in refrigerator.

Cheesecake Filling
Ingredients:
Twelve 1-ounce pieces semisweet chocolate
3 tablespoons unsalted butter
Five 8-ounce packages cream cheese
1 cup sugar
1 tablespoon vanilla
6 large eggs
2 egg yolks
1 cup heavy cream
3 tablespoons unsweetened cocoa powder
Crust

Instructions:
Prepare cheesecake casing.
Bring all ingredients to room temperature by allowing them to set out of the refrigerator for at
least 2 hours.
Combine the semisweet chocolate pieces and the butter in a double boiler and melt. Set aside
to cool to room temperature.
Beat the cream cheese at medium speed with an electric mixer until it is smooth. Do not
overbeat.
Add sugar in thirds, blending well at medium speed after each addition.
Add vanilla.
In a separate bowl, combine all eggs and egg yolks and beat lightly. Add beaten eggs, a third
at a time, to creamed mixture, beating lightly to incorporate the eggs throughout the mixture.
Add cooled melted chocolate and heavy cream in thirds, alternating chocolate and cream and
beating at medium speed after each addition.
Sift the cocoa powder over the cheese mixture in thirds, beating at medium speed after each
addition.
Using a rubber spatula, stir the sides of the mixture down, then begin folding the mixture,
going deep into the bowl and over the top, for 3 to 5 minutes.
Gently fold mixture into prepared casing or crust.
Bake in preheated 350-degree F oven for 15 minutes. Reduce oven temperature to 275
degrees and bake for 50 minutes for a soft-set center. For a firm-set center, bake for 1 hour.
Crack the oven door slightly, using a wooden spoon wedged in the top of the door to hold it
open slightly, and cool in this manner for 1 hour.
Take a very thin, short spatula, open the oven door, and working swiftly, without jiggling the
cheesecake, ream around the metal ring of the springform pan twice to loosen the cheesecake
from the edge of the pan.
Close the oven door, leaving the wooden spoon to hold it slightly ajar, and allow the
cheesecake to cool completely in the oven for 6 to 8 hours then refrigerate.

Old Christmas and the Old Twelve Days

Once upon a time, calendars were rather inaccurate. In 1582, Catholic countries of Europe  replaced the old Julian calendar with the Gregorian calendar because it was much more accurate. However, Protestant Europe refused to switch, on the grounds that the pope was not going to tell them what to do.

In 1752, almost 200 years later, England finally switched to the Gregorian calendar, but by that time, England had become 11 days off the rest of Europe. So officials dealt with the matter by simply dropping those 11 days and moving Christmas from January 6 to December 25.

Many people in England, not understanding all this high-powered math, believed their 11 days had been “stolen” and rioted. They refused to change.

Those folks from the British Isles who settled in America remained unaffected for a long time. Many were rural people, farmers, and they kept up the old celebrations for many years.

In Southeast Texas, according to columnist Joe Combs, who wrote a regular “Farm Corner” column for the Beaumont Enterprise until the 1970s, many old farming families in the area kept up the custom into the 1930s and 1940s, and many legends grew up around the magical idea of Old Christmas – the only true Christmas, in these country dwellers’ minds.

People believed that Old Christmas Eve was so magical, fig trees would bud, and if the limbs were covered with ice, the buds would crack the ice. Elder bushes bloomed on Old Christmas Eve, even in the snow.

Rural folks said Old Christmas Eve also had powerful effects on the animals. At the hour of midnight on Old Christmas Eve, cattle and horses knelt, and roosters crowed out of respect for the Christ Child.

The date also affected the dead. On Old Christmas Eve, it was said, spirits walked the earth.

So what would happen if a modern young woman, reared in the tradition of the Old Twelve Days, finds herself in a dilemma that only the magic walking the earth on Old Christmas Eve can solve?


I’ve been fascinated by the idea of Old Christmas for many years, and my Crimson Contemporary Romance novel, Old Christmas is the result.

[12 Days of Romance] Upon a Midnight Clear by MJ Schiller + Coffee Cake Recipe #giveaway


MERRY CHRISTMAS!

Good morning! Melinda was kind enough to invite me on today to share a little Christmas cheer! So I thought, as a gift to you, I’d share one of our family’s traditional Christmas recipes. Now, it may not be what you expect, it’s not a cookie…it’s a coffee cake. Traditionally we make individual “Jesus’ Birthday Cakes.” Even when the kids were young they would help in preparing this dish and would choose their own pan and grease and flour it. I have some small pans that are shaped like Christmasy things, a snowflake, a stocking, an angel, a candy cane, etc.  Then Christmas morning we’d have a yummy treat all ready and we would stick candles in them and sing “Happy Birthday” to the baby Jesus. It can be made in a Bundt pan as well.

Quick Coffee Cake
1 pkg. yellow cake mix          
1 small pkg. vanilla instant pudding
¼ c. oil
¾ c. water
4 eggs, added one at a time
1 tsp. butter extract
1 tsp. vanilla

Mix ingredients; beat for 8 minutes at medium speed. Grease and flour pan Bundt pan. Layer cake mix with *cinnamon mix, beginning and ending with cake. Bake at 350 degrees for 40-45 minutes. Cool 8 minutes. Glaze while warm.
* Cinnamon mix- In a bowl, stir together 1/4c. sugar & 2 tsp. cinnamon.
Glaze- 1 c. powdered sugar
            2 T. milk
            ½  tsp. butter extract
            ½ tsp. vanilla

She loves to read, karaoke (where she can pretend she is a rock star) and spends WAY too much time on Facebook. She grew up in St. Louis and still has family there.

Prologue
"Sarah, don't do this. Damn it! Stay with me." I reach over and gently brush her blood soaked hair off her forehead. Even in this horrific moment, I'm in absolute awe of how beautiful she looks. Bleeding and broken, unmoving in my arms she is still the most mesmerizing woman I have ever laid eyes on. Deep down, I know this just the husk of my wife. My Sarah would never have done this to herself. More importantly, she never would have done this to me. Maybe it takes this level of madness, but I finally realize that I have lost her completely. Whether she lives or dies, Sarah is gone. This is not the woman who made me laugh more in seven years than the rest of my life combined. She definitely isn't the woman who I spent years planning a future with, a future that now no longer exists. I feel a heavy weight in my chest at my silent confession, but oddly enough I also feel a weight lifted off my shoulders. I have watched this woman disintegrate in front of my eyes for almost seven months; everyday losing her a little more. The light in her eyes fading, while piece by piece and bit by bit, she lost grip of reality. Mentally, emotionally, and now physically, she's left me. I’m a 32 year old wife and stay at home mom to four kids under the age of five, including a set of twins. My life is crazy, which is probably why I drink entirely too much wine. Oh who am I kidding, I had a love affair with wine long before the kids came along. I was born and raised in Savannah Georgia, but we recently moved to Chicago. Let me tell you, this southern girl was not ready for the cold weather up here! I’m an avid reader, but I haven’t always been that way. A few years ago my sister loaned me her Nook Color, and it changed my life forever. In the span of about two years, I read over 500 books. Luz headed after her. Aaron caught her before she got to the door. “Where are you going?” he demanded. “It’s late and it’s dark—”

What was the first romance novel you read that made an impression on you?
When I was a kid, I loved this series of romances for young adults called Sunfire Romances. They were all titled by girls’ names, and they were set throughout American history, during the time of some important or noteworthy event. I gobbled those books up—for both the romance and the history. I still own all of my old paperback copies of them.
Do you plan all your characters out before you start a story or do they develop as you write?
I tend to do characterization intuitively. That is, I’ll go with actions, thoughts, and dialogue that feels right to me at any given moment of the book. So I’ll start with broad characteristics of a certain character (he’s got control issues, or she clings to her independence), but I won’t have all the nuances worked out until I actually write the story. Often, a character won’t fully take shape until the revision process, since it’s only then that I realize how the characterization and the plot come together.
Who is your perfect hero? And why?
My favorite heroes are all complex and layered, and their power and appeal come from something deeper than physicality. They’re always strong and sexy, of course, but their real power is mental, verbal, emotional, rather than just physical. I want a man who can blow me away and turn my knees to jelly by his mind and his conversation—not just the way he looks.
How did you get the idea for this particular novel?
I introduced Andrew as a character in Seducing the Enemy, since he’s the brother of Harrison, the hero of that book. So I knew I was going to write a book about Andrew. I was flipping channels one day and came across a documentary on the Greek islands, and I realized I needed to write a book set on Santorini. That was how the inspiration came together for Playing the Playboy.
What is your favorite scene in your new release?
I really love two scenes in Playing the Playboy. One is the love scene after the dog-crisis. It’s really raw and emotional, and I love how it turned out. And then I absolutely love the scene when Andrew returns to Oia after the black moment and finds Laurel working and helps her back to her room. It’s nothing dramatic or earth-shattering—it’s a really quite scene—but the emotions feel really deep and authentic to me. I thought about amping up the drama, but finally decided against it, since the subtlety conveys exactly the feeling I want.

What’s your favorite body part of the opposite sex?
His mind. Or, if that doesn’t count, his abs.
What does love feel like?
Like the rest of life—sometimes thrilling and sometimes heartbreaking and sometimes just hard work.
When was your last kiss?
Does kissing my dog count?
What’s an absolute no-no in a relationship?
Betrayal.
Do you believe in love at first sight?
No. Absolutely not. I believe in attraction at first sight, but that never equals love.

            “Your guests haven’t been in residence, at least not actively, in more than a year. We aren’t appealing to anyone right now and we need to. So, makeover starts this afternoon and your new training begins in the morning.”
            “I know what I need to know about running a vacation resort.”
            “You need to experience a vacation to sell it. We need day-trips, we need amenities. I’ll bet you’ve never gone para-sailing or sky diving, much less enjoyed a couple’s massage.” Her cheeks pinked at the last suggestion and Santiago smiled. “Celebrities visiting Casa, playing on our private beach, being featured in an advertising campaign—with a few pictures leaked to the tabloids to get the word out even sooner. Casa needs this.”
            Esme took a few breaths and then settled back into her chair. “I can’t afford to pay the salary of a New York advertising crew. Seriously, Santiago, you have to cancel.”
            “My three months, remember? It won’t cost you a thing. The photographer owes me a favor. The only cost will be the campaign copy, which will be negligible. I do know what I’m doing, Esmerelda.”
            “Okay, mail.” Esme shook her head as if clearing thoughts of the upcoming ad campaign from her head. “Marquez usually separates bills from letters—”
            “As the mail will be delivered to the front desk, I’m happy to see to it. And let’s cut to the chase.” He leaned back in the chair and clasped his hands behind his head. “I don’t want to be tied down to a vacation villa for the rest of my life.             Esme swallowed, crossed and re-crossed her legs before clasping her hands in her lap. “What do you want? A payoff? You’ve seen the books, you know there isn’t much money. But if it’s money you want, I’ll agree to your price. I just need time to come up with the capital.”
            She really didn’t know him at all. He shouldn’t be surprised, but he was. Surprised and a bit disappointed. “I need your money like I need another surfing championship,” he said, sitting up straight. “No, what I want from you is a bit more. . . ephemeral. I want your time. For three hours each day, you belong to me. No villa work. No guest handholding.” He walked around the desk to rest his hip against one corner. “No conferences with staff. No following the maids on their routine cleanings and no visits to the kitchen to give Gloriana instructions. For three hours each day, your time is my time.”
            “You can’t be serious. That. . . that’s just. . .” She trailed off when his index finger traced the line of her jaw. He lowered his voice.
            “No work. No phones. No villa. You do what I say, what I want.”
